Healthy Blueberry Muffins

Ingredients
  • 1½ cups white whole wheat flour
  • 1 TB baking powder
  • ¼ tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • ¼ cup maple syrup or honey
  • ¾ cup milk or water
  • ¼ cup melted coconut oil
  • ½ cup fresh or frozen blueberries
Instructions
  1. Whisk together the egg, vanilla, maple syrup, milk and oil. Then add in the flour, baking powder and salt. Mix till combined and add in blueberries. Pour into a greased muffin pan. Bake at 350F for 15-20 minutes.Enjoy!
